Chickpea Rice

Ingredients

  • Soak the rice for 1/2 an hour in water
  • Rinse and drain
  • Heat the Olive oil in a saucepan on high heat
  • Fry the rice for 2 minutes then add the chickpeas & salt
  • Add boiling water and stir
  • Cover and put on low heat for 25 mins
  • Only stir once during mid cooking

2 cups Basmati Long Grain Rice
540mls can Chickpeas

1 tablespoon Salt
4 tablespoons Light Olive Oil
Boiling Water
