Dry Ingredients
1 cup Coconut Flour
½ cup Almond Flour
1 cup Crushed Walnuts
½ cup Erythritol/Sweetener
2 teaspoons Baking Powder
½ teaspoon Cardamom

Wet Ingredients
5 Eggs
1 Zucchini (grated)
½ cup or 1 stick Butter (melted)
1 teaspoon Vanilla Essence
½ cup Sour Cream

Cream Cheese Icing
227gms Cream Cheese (room temperature)
2 tablespoons Butter (room temperature)
½ cup Erythritol/Sweetener
1 tablespoon Lemon Juice

Crushed Pistachios

Gluten Free Zucchini & Walnut Cream Cheese Cake

  • Add the coconut flour, almond flour, sweetener, crushed walnuts, baking powder & cardamom in a bowl and mix together
  • Preheat oven 350F or 180C
  • Add the eggs in a mixer & mix together
  • Add the melted butter, sour cream, vanilla essence & mix together
  • Add the grated zucchini & mix together
  • Mix in the flour mixture gradually
  • Spray non stick spray in a baking dish
  • Pour the batter in the baking dish & smooth over
  • Bake for 1 hour

Allow to cool completely

For the Icing:

  • Place the cream cheese, sweetener, butter, lemon juice & in a bowl
  • Mix together with a hand held mixer
  • Add the cream cheese icing on top of the cake
  • Spread evenly
  • Sprinkle the crushed pistachios on top
