Pumpkin & Walnut Loaf

Directions

1&1/2 cups All Purpose Flour
1 cup Pumpkin Puree
1 cup Sugar
1 cup Crushed Walnuts
1/2 cup / 1 stick Butter 
(room temp)
2 Eggs 
(room temp)
9gms Vanilla Sugar
1 teaspoon Cinnamon
1 teaspoon Baking Powder
1 teaspoon Cardamom

  • Add the flour, baking powder, cinnamon, cardamom & vanilla sugar to a sift
  • Sift all together 
  • Add the walnuts in the flour mixture & mix together
  • Add the sugar & butter together in a mixer
  • Mix together until creamy
  • Add the eggs one at a time
  • Add the pumpkin puree
  • Gradually add spoonfuls of the flour mixture in the mixer
  • Spray some non stick spray in a loaf pan lined with parchment paper
  • Add some crushed walnuts at the bottom of the pan
  • Pour the batter in the pan & spread evenly
  • Bake at 350F /180C for 1 hour -1 hour & 15 minutes
  • Test with a tooth pick & set aside to cool
  • ​Flip over on a wire rack to cool​​
