Directions

Ingredients

Walnut, Pumpkin & Maple Cake

2 cups All Purpose Flour
1 cup Pumpkin Puree
1/2 cup Maple Syrup
1 cup Crushed Walnuts
1 cup Sugar
1 cup/2 sticks Butter (room temp)
4 Eggs (room temp)
1 tablespoon Baking Powder
1 teaspoon Cinnamon
1 teaspoon Cardamom
1/2 teaspoon Salt
1 teaspoon Vanilla Essence


Icing Ingredients
2 cups Icing Sugar
1/2 cup Cream Cheese (room temp)
2 tablespoons Butter (room temp)
1/4 cup Maple Syrup


  • Add the flour, baking powder, cinnamon, cardamom & salt to a sift
  • Sift all together 
  • Add the walnuts in the flour mixture & mix together
  • Add the sugar & butter together in a mixer
  • Mix together until creamy
  • Add the eggs one at a time
  • Add the pumpkin puree
  • Add the vanilla essence
  • ​Add the maple syrup
  • Gradually add spoonfuls of the flour mixture in the mixer
  • Spray non stick spray on 2x9 inch pans
  • Place round parchment papers in the pans
  • Divide the batter in the 2 pans and spread evenly
  • Bake at 350F/180C for 40-45 mins
  • Test with a tooth pick & set aside to cool
  • ​Flip over on wire racks to cool
  • To make the icing
  • Add the icing sugar in the bowl
  • Add the cream cheese, butter & maple syrup & mix together
  • Mix together with a hand held mixer
  • Preparing the cake
  • Using a serated knife, slice the top of the cake level
  • Do the same with the other cake
  • Place half of the icing on the bottom cake
  • ​Smooth over to the edge
  • Place the other cake on top, smooth side up
  • ​Place the rest of the icing on top
  • ​Smooth over to the edge
  • Place a template of a maple leaf on top of the icing
  • ​Sprinkle cinnamon powder on top
  • ​Peel off the template
  • Garnish with walnuts
