Ingredients 

Dough Ingredients
3 cups Bread Flour
2 tablespoons Light Olive Oil
1 teaspoon Salt
1& ½ cups Lukewarm Water
1 teaspoon Sugar
2 x packets Active Dry Yeast 8gms each

Filling Ingredients
300gms Frozen Spinach (thawed & squeezed excess water)
150gms Crumbed Fetta Cheese
3 Spring Onions (sliced)
1 tablespoon Lemon Juice
1 teaspoon Sumac
½ teaspoon Salt

Bread Wash
1 tablespoon Flour
1 teaspoons Sugar
Water 
Sesame Seeds

  •  Add the 2 packets of yeast in the lukewarm water
  • Add the sugar
  • Mix & set aside to activate for 5 minutes
  • Add the flour in the mixer & attach the dough hook
  • Add the salt & mix together
  • Add the oil
  • Add the yeast mixture
  • Knead for 8-10 minutes (the dough should not stick to the bowl)
  • Place the dough in a lightly oiled bowl
  • Cover with plastic wrap
  • Cover with a teatowel and set aside to rise for 1 hour
  • In a separate bowl add the spinach, fetta cheese, spring onions & mix together
  • Add the sumac and salt & mix together
  • Add the lemon juice & mix together
  •  Using a small ice cream scoop or spoon, make portions of the mixture
  • Make into round balls
  • The dough should double in size
  • Flour the work surface
  • Roll the dough into a log
  • Cut the dough lengthwise in half
  • Cut & divide the dough in small pieces
  • Shape into small balls of dough
  • Place on a baking tray lined with parchment paper
  • Cover with a tea towel & set aside for ½ an hour to rise
  • Preheat oven to 500F or 250C
  • Take one piece of ball and cut into two
  • Shape into round balls
  • Flour the work surface, using a rolling pin, flatten the dough into a circle
  • Place one ball of spinach mixture in the centre of the dough
  • Pick up the 2 sides of the dough, pinch the sides to seal
  • Fold the top and seal to the dough, making a triangle shape
  • In a small bowl, mix the flour, water & sugar
  • Brush the mixture on the spinach rolls
  • Sprinkle the sesame seeds on top
  • Bake in the oven on the bottom shelf for 8-10 minutes
