Walnut & Pistachio Cake

Directions

  • Add the flour, baking powder, cardamom & salt to a sift
  • Sift all together & set aside
  • Add the walnuts & pistachios to a food processor
  • Process together & place in a bowl
  • ​Keep 1/2 cup of the mixed nuts for garnishing
  • Add the mixed nuts in the flour mixture & mix together
  • ​Preheat oven 350F or 180C
  • Add the sugar & butter together in a mixer
  • Mix until well combined
  • Add the eggs one at a time
  • Add the orange blossom water & almond extract
  • Add the flour mixture a bit at a time
  • Alternate with some milk until all well combined
  • Grease 3 pans with non stick spray
  • Place round parchment papers in the pans
  • Divide the batter in 3 pans and spread evenly
  • Bake for 40-45 minutes on the middle shelf
  • Test with a tooth pick & set aside to cool
  • To make the icing
  • Add the icing sugar in a sift
  • Sift in the mixer bowl
  • Add the butter & mix together
  • Add the milk & orange blossom water & mix until well combined
  • Preparing the cake
  • Flip the cakes on cooling racks
  • Set aside to cool
  • Place a cake on a cake turner
  • Cut off the top of the cake level
  • Place some frosting on the cake
  • Repeat with 2nd layer & 3rd layer
  • Spread the frosting all over the cake
  • Garnish the nut mixture on the cake

Dry Ingredients

2 &1/2 cups Flour
1 cup Walnuts
1 cups Pistachios
1 tablespoon Baking Powder
1 teaspoon Cardamom
1/2 teaspoon Salt

1&1/2 cups Sugar
1 cup Milk
1 cup Butter (room temperature)
4 Eggs
1 teaspoon Orange Blossom Water
1/2 teaspoon Almond Extract


Icing Ingredients
4 cups Icing Sugar
1 cup Butter (room temperature)
1/4 cup Milk
1 teaspoon Orange Blossom Water
