Directions

1 Zucchini
1 cup Mozzarella Cheese
½ cup grated Carrot
½ cup sliced Spring Onions
¼ cup chopped Parsley
¼ cup Almond Flour
1 teaspoon Baking Powder
½ teaspoon Baking Soda
½ teaspoon Salt
½ teaspoon Curry Powder
½ teaspoon Paprika
2 Eggs
1 teaspoon Salt (for Zucchini)
Light Olive Oil for pan frying

  • Cut & peel the end of the zucchini
  • Grate the zucchini
  • Place the grated zucchini in a sift
  • Add the salt on the zucchini & mix
  •  Allow to sit for 20 minutes to remove excess water
  • Add the carrot, spring onions, parsley, almond flour, baking powder, baking soda & spices in a bowl & mix together
  • Crack the eggs in a separate bowl & whisk together
  • Add the mozzarella cheese & mix together
  • Add the dry mixture in the egg mixture & mix together
  • Place the zucchini on a paper towel
  • Squeeze excess water
  • Place the zucchini in the mixture & mix together
  • Heat some olive oil in a frypan on high heat
  • Using an icecream scoop place a spoonful in the frypan
  • Flatten with a spoon
  • Flip after golden brown
  • Place on a paper towel
